    Bạc xỉu is the milky version of cà phê sữa: a tall glass of sweetened condensed milk and fresh milk with just a small pour of phin coffee on top. It started as a drink for kids and morning shifts, and now most cafés in Saigon serve it iced.

    INGREDIENTS

    • 15 g Vietnamese ground coffee
    • 4–5 tbsp condensed milk
    • Hot water (about 60–80 ml)
    • Ice cubes (optional)
    • Phin filter

    HOW TO MAKE IT

    1. 1Add a generous amount of condensed milk to your glass.
    2. 2Place the phin filter on top of the glass.
    3. 3Add 15 g of ground coffee and press lightly with the filter press.
    4. 4Pour a little hot water (about 20 ml) to bloom the coffee; wait 30 seconds.
    5. 5Fill the phin with hot water (about 60–80 ml) and let it drip (4–5 minutes).
    6. 6Remove the phin and stir well. Serve hot or pour over ice.
    7. 7The result should be noticeably sweeter and milkier than regular cà phê sữa.
