Cà phê muối is the salt coffee from Huế: phin-brewed robusta poured over a layer of lightly salted, sweet whipped cream. The salt rounds off the bitterness and pushes the sweetness forward, so the drink ends up tasting smoother than it looks.

- 20 g Vietnamese ground coffee
- 100 ml whipping cream
- 1/4 tsp sea salt
- 1 tbsp condensed milk
- Hot water (about 80–100 ml)
- Phin filter
HOW TO MAKE IT
- 1Place the phin filter on a cup or glass.
- 2Add 20 g of ground coffee and press lightly with the filter press.
- 3Pour a little hot water (about 20 ml) to bloom the coffee; wait 30 seconds.
- 4Fill the phin with hot water (about 80–100 ml) and let it drip (4–5 minutes).
- 5In a separate bowl, combine the whipping cream, salt and condensed milk.
- 6Whisk until lightly thickened (soft peaks).
- 7Gently spoon or pour the salted cream on top of the coffee (hot or over ice).
- 8Don't stir - drink through the salted cream layer. The salt brings out the hidden sweetness!
