Cà phê đen is plain Vietnamese black coffee, brewed slowly through a phin and served either hot (nóng) or over ice (đá). No milk, no sugar by default, just dense robusta with a thick body and dark chocolate notes.

- 20 g Vietnamese ground coffee
- Hot water (about 80–100 ml, just off the boil)
- Phin filter
- Optional: sugar to taste
HOW TO MAKE IT
- 1Place the phin filter on your cup.
- 2Add 20 g of ground coffee and press lightly with the filter press.
- 3Pour a little hot water (about 20 ml) to bloom the coffee; wait 30 seconds.
- 4Fill the phin with hot water (about 80–100 ml) and let it drip (4–5 minutes).
- 5Remove the phin and enjoy hot.
- 6For an iced version (Cà phê đen đá), pour over ice.
