    Panna Cotta

    Vietnamese coffee panna cotta is a chilled Italian set cream flavoured with strong phin-brewed robusta and condensed milk. You make it the day before, unmould it from a ramekin, and serve it with a small pour of extra coffee on top.

    INGREDIENTS

    • 100ml strong Vietnamese coffee
    • 300ml heavy cream
    • 100ml condensed milk
    • 2 tsp gelatin powder
    • 3 tbsp cold water
    • Caramel sauce for topping

    HOW TO MAKE IT

    1. 1Sprinkle gelatin over cold water and let bloom for 5 minutes.
    2. 2Brew strong Vietnamese coffee using the phin.
    3. 3Heat cream in a saucepan until just simmering (don't boil).
    4. 4Remove from heat, stir in bloomed gelatin until dissolved.
    5. 5Add condensed milk and coffee, whisk until smooth.
    6. 6Pour into serving glasses or ramekins.
    7. 7Refrigerate for at least 4 hours until set.
    8. 8Top with caramel sauce before serving.
