Vietnamese Coffee Panna Cotta

Vietnamese coffee panna cotta is a chilled Italian set cream flavoured with strong phin-brewed robusta and condensed milk. You make it the day before, unmould it from a ramekin, and serve it with a small pour of extra coffee on top.

- 100ml strong Vietnamese coffee
- 300ml heavy cream
- 100ml condensed milk
- 2 tsp gelatin powder
- 3 tbsp cold water
- Caramel sauce for topping
HOW TO MAKE IT
- 1Sprinkle gelatin over cold water and let bloom for 5 minutes.
- 2Brew strong Vietnamese coffee using the phin.
- 3Heat cream in a saucepan until just simmering (don't boil).
- 4Remove from heat, stir in bloomed gelatin until dissolved.
- 5Add condensed milk and coffee, whisk until smooth.
- 6Pour into serving glasses or ramekins.
- 7Refrigerate for at least 4 hours until set.
- 8Top with caramel sauce before serving.
